Lighting is always an issue. Try to remember that side lighting gives you texture and detail, front lighting tends to make flat images, and backlighting creates silouettes. The best time to photograph outdoors is early morning or just before sunset. Just set you up some lights and a subject and practice taking different shots to see the effects. My favorite lighting is natural lighting. I hope this helps some. A great book to read is John Hedgecoe's The new manual of photography.
